Easy Chickpea Salad

Ingredients
  

  • 1 can 15 oz. chickpea, rinsed & drained
  • 1 cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup green bell pepper finely chopped
  • 2 medium tomatoes diced
  • 1/4 cup fresh cilantro chopped Dressing
  • Juice from 2 limes
  • 1 Tbsp. olive oil
  • 1/2 tsp. ground cumin
  • Salt and pepper to taste

Instructions
 

  • Dressing: in a small bowl, squeeze the juice of 1 lime, add olive oil and cumin.
  • Whisk the ingredients together and set aside.
  • In a big bowl, add chickpeas, cucumber, red onion, bell pepper, tomatoes, and cilantro.
  • Pour the dressing on top and mix it all together.
  • Let it stand for 5 min to let the flavors develop.
  • Serve immediately or refrigerate
