Easy Chickpea Salad
Ingredients
- 1 can 15 oz. chickpea, rinsed & drained
- 1 cucumber diced
- 1/2 cup red onion finely chopped
- 1/2 cup green bell pepper finely chopped
- 2 medium tomatoes diced
- 1/4 cup fresh cilantro chopped Dressing
- Juice from 2 limes
- 1 Tbsp. olive oil
- 1/2 tsp. ground cumin
- Salt and pepper to taste
Instructions
- Dressing: in a small bowl, squeeze the juice of 1 lime, add olive oil and cumin.
- Whisk the ingredients together and set aside.
- In a big bowl, add chickpeas, cucumber, red onion, bell pepper, tomatoes, and cilantro.
- Pour the dressing on top and mix it all together.
- Let it stand for 5 min to let the flavors develop.
- Serve immediately or refrigerate
