One Skillet Turkey Tacos

Ingredients
  

  • 2 medium carrots shredded
  • 1 15oz. can low-sodium pinto beans
  • 1 pound of lean ground turkey 85% lean
  • 1 8oz. can chopped tomatoes
  • 1 medium zucchini chopped
  • Half an onion chopped
  • 1 1/2 cup spinach
  • 1 Tbsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/2 tsp. ground black pepper
  • 1/2 tsp. cumin
  • Sharp cheddar cheese grated

Instructions
 

  • Heat skillet over medium-heat. Add turkey and brown.
  • Add chopped veggies, beans, canned tomatoes, garlic powder, oregano, chili powder, cumin, salt, and black pepper to skillet. Stir well.
  • Reduce heat to medium. Cook until thickened, about 4-7 minutes. Once thickened, sprinkle sharp cheddar cheese over the top of the dish, melting cheese before serving.
  • Serve with whole wheat flour tortillas.
