Watermelon Feta Salad
Ingredients
- 4 cups cubed watermelon
- 1/2 cup crumbled feta cheese or goat cheese
- 1/4 cup fresh mint leaves chopped
- 2 Tbsps. Olive oil
- 1 Tbsp. balsamic vinegar or lime juice for a tangy twist.
- Salt and pepper to taste
Instructions
- In a large bowl, combine watermelon, feta cheese and mint.
- Drizzle olive oil and balsamic vinegar over the watermelon mixture.
- Toss everything together until ingredients are well coated.
- Add salt and pepper to taste.
- Enjoy as a refreshing appetizer or side dish!
